How does a Spirits & Vino and Bolle menu get designed? It takes a staff member that cares and an owner that trusts his key spirit and wine procurer for all five Picazzo’s locations. Sean Manning, GM at Scottsdale Promenade, approached Rick Freedman, Founder of Picazzo’s and requested that the wine and cocktails be updated for a trendier menu selection. Rick gave Sean the green light and the freedom to formulate the menu. In addition to managing his own restaurant location at the time at Paradise Valley/Phoenix, Sean spent hours creating Picazzo’s current Vino & Bolle, Beer, Cocktails menu. Sean’s goal was to not only provide a full boutique of wine selections but also to highlight west coast vineyards and clean wines that represent local and Italian vineyards at affordable prices. By clean, we mean vegan, sustainable, organic, green certified and biodynamic processes. Sean spends a lot of time with the vendors, tasting, and evaluating the flavors for our guest clientele.
Obviously, wine is made simply and scientifically from grapes however, they may have been grown with or without pesticides and finished using animal-derived products through the fining process.
“Fining is a process wine goes through while it ages to extract impurities in order to produce a clearer, more stable product. After a fining agent is added to wine in a tank or barrel, it drifts about, picking up proteins, yeast, bad flavors and other organic particles before settling to the bottom of the container for easy removal. The clear wine is then racked off into a clean tank, leaving behind minute traces, if any, of the fining agent in the finished wine.” -VegNews Jan 2009.
Vegan wine refers to finish and filtering wine with non-animal based methods.
Sustainable refers to the efficient production of safe, high quality agricultural products, in a way that protects and improves the natural environment, the social and economic conditions of farmers, their employees and local communities, and safeguards the health and welfare of all farmed species.
Organic refers to wine made with grapes grown in accordance with principles of organic farming which excludes the use of artificial chemical fertilizers, pesticides, fungicides, and herbicides. It may contain naturally occurring sulfites up to 20ppm.
NAPA/LODI Green Certified refers to wineries that develop specific plans tailored to protect and enhance the ecological quality of the region or create production facility programs that reduce energy and water use, waste and pollution.
Biodynamic is a method of organic farming that employs a holistic approach and understanding of agricultural processes.

Sean and his significant other, Ashley, have built their careers in the hospitality industry and can be found frequently in our Arizona valley’s trending restaurants. Their love for the industry is infectious and they exemplify the current “foodie culture”. Sean brings a lot of enthusiasm, energy and career knowledge to Picazzo’s and keeps us trending. You will find Sean at his newest acquired location at the Scottsdale Promenade most of the week or training others at one of Picazzo’s current five locations.
